Why this salad works
· Plant-based protein from kidney beans
· Fiber from beans and vegetables
· Unsaturated fat from olive oil
· Color, crunch and freshness
· Bold flavor without a sugary bottled dressing
Ingredient benefits
Kidney beans provide plant protein, fiber, folate, iron and potassium. The bell pepper, tomatoes and lemon juice contain vitamin C, which helps the body absorb iron from plant foods more effectively.
Bell pepper adds vitamin C, sweetness and crunch. Cucumber adds water-rich volume. Cherry tomatoes bring vitamin C and potassium. Red onion, parsley and optional cilantro build flavor without relying on excess sugar or salt.
Olive oil supplies unsaturated fat and helps distribute the flavors of garlic, oregano, Dijon mustard, lemon and vinegar throughout the salad.
