·     1/4 cup fresh cilantro, optional

·     3 tablespoons olive oil

·     1 garlic clove, minced

Directions

1.  Combine the beans, vegetables and herbs in a large bowl.

2.  Whisk the olive oil, vinegar, lemon, garlic, Dijon, oregano, salt and pepper.

3.  Pour the dressing over the salad and toss gently.

4.  Refrigerate for at least 30 minutes before serving.
