Its mild flavor practically disappears underneath chocolate, almond butter, and vanilla while adding body and creaminess to the smoothie.

The result?

A thick, chocolatey protein smoothie that sneaks another vegetable into your day without tasting like somebody liquefied your dinner.

Ingredients

  • 1 cup unsweetened almond milk

  • 1 scoop chocolate protein powder

  • 1 cup frozen cauliflower florets

  • 1 tablespoon unsweetened almond butter

  • 1 tablespoon chia seeds

  • 1 tablespoon unsweetened cocoa powder

  • ¼ teaspoon vanilla extract

  • 5–6 ice cubes

  • Optional stevia or monk fruit to taste

Blend all ingredients for approximately 30–60 seconds or until completely creamy.

Why Put Cauliflower in a Smoothie?

Because cauliflower is surprisingly good at disappearing.

It contains vitamin C, folate, fiber, and several plant compounds while being relatively mild in flavor.

Frozen cauliflower also creates volume and thickness without requiring several bananas or cups of frozen fruit.

This doesn't make bananas unhealthy.

It simply gives you another option.

For somebody trying to eat more vegetables, this is what I call vegetable stacking—finding opportunities to put plants into meals where you normally wouldn't think to use them.

For women approaching and moving beyond 40, adequate protein combined with resistance training becomes an especially important strategy for preserving lean tissue.

Almond Butter

One tablespoon of almond butter gives the smoothie richness while contributing monounsaturated fats, vitamin E, magnesium, and a little additional protein and fiber.

Healthy fats can also improve satiety.

And let's be honest:

Chocolate and almond butter were already minding their business beautifully together long before we brought cauliflower into the situation.

Chia Seeds

Chia provides both soluble and insoluble fiber as well as plant omega-3 ALA.

We want chocolate.

We don't necessarily need dessert-level added sugar to get it.

If you're purchasing fortified almond milk, it may also contribute calcium and vitamin D.

A Better Way to Think About Smoothies

One of the reasons smoothies sometimes leave people hungry 90 minutes later is because they're essentially drinking carbohydrate.

Fruit.

Juice.

Sweetened yogurt.

Honey.

Done.

Nothing is inherently wrong with those individual foods.

But together they may not create the most satisfying meal.

This recipe follows a different framework:

Protein: protein powder
Fiber: cauliflower + chia
Healthy fat: almond butter + chia
Plants: cauliflower + cocoa

That's a smoothie with structure.
