High-Protein Oven-Baked Cottage Cheese Flatbread
This viral flatbread combines cottage cheese, eggs, flour and psyllium husk to create a flexible alternative to traditional wraps. It can be used for sandwiches, breakfast wraps, personal pizzas, dipping or open-faced meals.
Depending on the cottage cheese and flour, the entire flatbread contains approximately 26–31 grams of protein—not 35–38 grams. That is still meaningful. We do not need to exaggerate it for the recipe to be useful.
Ingredient benefits
Cottage cheese supplies protein, calcium, phosphorus, selenium and vitamin B12. Sodium varies by brand. Two eggs add complete protein, fat and choline.
Almond flour produces a lower-carbohydrate, higher-fat version with unsaturated fat and magnesium. Oat flour creates a higher-carbohydrate, lower-fat whole-grain version.
Psyllium is a concentrated source of soluble fiber that absorbs moisture and helps bind the batter. Adequate fluid intake matters, especially for people who do not routinely consume much fiber.
Recipe ingredients
· ½ cup cottage cheese
· 2 large eggs
· 2 tablespoons almond flour or oat flour
· 1 tablespoon psyllium husk powder
· ¼ teaspoon baking powder
· ¼ teaspoon salt
· Optional garlic powder, Italian herbs or everything-bagel seasoning
Directions
1. Preheat oven to 350°F and line a baking sheet with parchment.
2. Combine cottage cheese and eggs. Blend first for a smoother texture if desired.
3. Add flour, psyllium, baking powder, salt and seasonings.
4. Spread into a rectangle about ¼-inch thick.
5. Bake 30–35 minutes until golden, firm and dry on top.
6. Cool 15–20 minutes before slicing or lifting from parchment.
